  • 1 tbsp ground cinnamon
  • 1 tbsp brown sugar or coconut sugar

Instructions

  1. Prepare the Dry Ingredients: Combine rolled oats, vanilla protein powder, cinnamon, and baking powder in a large bowl. Whisk thoroughly to evenly distribute the leavening agent and spices for balanced flavor and texture.
  2. Mix the Wet Ingredients: In a separate bowl, beat eggs and then stir in almond milk, Greek yogurt, honey or maple syrup, and vanilla extract until the mixture is smooth and creamy.
  3. Combine Wet and Dry Mixtures: Slowly pour the wet ingredients into the dry ingredients and gently fold together. Avoid overmixing to keep the muffins light and fluffy.
  4. Create the Cinnamon Swirl: Mix cinnamon and brown sugar (or coconut sugar) in a small bowl.
