Scale

Dough Ingredients

  • 3 ½ cups all-purpose flour
  • 2 ¼ tsp active dry yeast (1 packet)
  • 1 cup warm milk (about 110°F / 43°C)
  • ¼ cup granulated sugar
  • 1 tsp ground cinnamon
  • 1 tsp salt
  • 3 tbsp unsalted butter, melted
  • 1 large egg, beaten
  • 1 cup raisins

Instructions

  1. Prepare the Dough: Dissolve the yeast in warm milk with a pinch of sugar and let it activate until frothy, about 5-10 minutes. In a large bowl, combine all-purpose flour, sugar, salt, and cinnamon.
  2. Mix Wet Ingredients: Add melted butter and beaten egg to the activated yeast mixture, then pour these wet ingredients into the dry mix. Stir until a sticky dough forms.
  3. Knead the Dough: Turn the dough out onto a floured surface and knead for 8 to 10 minutes until smooth and elastic, developing gluten to give the bread its perfect chew.
  4. Incorporate Raisins: Gently knead the raisins into the dough, distributing them evenly without crushing to ensure bursts of sweetness in every slice.
  5. Let the Dough Rise: Place the dough in a greased bowl, cover with a cloth, and leave it to rise in a warm spot until doubled in size, about 1 to 1.5 hours.
  6. Shape and Second Rise: Punch down the dough, shape into a loaf, and place it in a greased bread pan. Cover again and let it rise for another 45 minutes until puffy.
  7. Bake the Bread: Bake in a preheated oven at 350°F (175°C) for 30 to 35 minutes until the crust is golden brown and a toothpick inserted comes out clean. Let cool slightly before slicing.

Notes

  • Use room temperature ingredients to help the yeast activate evenly and create a uniform dough texture.
  • Do not skip the kneading process to build gluten, ensuring a fluffy yet sturdy loaf.
  • Soak raisins in warm water or juice for 10 minutes prior to adding for extra plumpness.
  • Adjust cinnamon amount to your preferred spice level.
  • Check doneness by tapping the bottom of the loaf; it should sound hollow when perfectly baked.
