Ingredients

Scale

Noodles

  • 8 oz rice noodles or spaghetti (choose gluten-free if desired)

Sauce

  • 2 tablespoons fresh lime juice (about 1 lime)
  • 2 cloves garlic, finely minced
  • 2 tablespoons olive oil or sesame oil
  • Salt, to taste
  • Black pepper, to taste
  • Optional: 1/4 teaspoon chili flakes

Herbs and Garnishes

  • 1 cup fresh cilantro, chopped
  • Optional garnishes: toasted sesame seeds, chopped peanuts, thinly sliced green onions

Instructions

  1. Cook the Noodles: Bring a pot of salted water to a boil and cook your noodles according to package directions until al dente. Drain well and rinse under cold water to stop cooking and prevent sticking. Set aside to cool slightly.
  2. Prepare the Cilantro Lime Sauce: In a small bowl, mix fresh lime juice, minced garlic, olive or sesame oil, salt, pepper, and optional chili flakes. Stir thoroughly to combine all the bright flavors evenly.
  3. Combine Noodles with Sauce and Cilantro: Place the cooked noodles in a large bowl. Pour the prepared lime sauce over the noodles, then add a generous handful of chopped fresh cilantro. Toss gently but thoroughly to ensure every strand is coated.
  4. Taste and Adjust: Sample the noodles and adjust seasonings as needed. Add more lime juice for acidity, more salt for balance, or additional chili flakes if you desire more heat. Customize the flavor to your preference.
  5. Serve Warm or Chilled: Enjoy the Cilantro Lime Noodles immediately while slightly warm, or chill in the refrigerator for a refreshing cold dish ideal for hot days.

Notes

  • Do not overcook noodles; they should be slightly firm to hold the sauce well.
  • Use fresh, bright green cilantro for the best herbal flavor.
  • Add lime juice gradually to balance acidity.
  • Use quality olive or toasted sesame oil for enhanced flavor.
  • Chilling the noodles for 30 minutes deepens the zest and herb infusion.
  • Rinse cooked noodles under cold water and toss with a little oil to prevent sticking.
  • Store leftovers in an airtight container in the refrigerator for up to 3 days; add fresh lime juice before serving to refresh flavors.
  • Freezing is not recommended as noodles and herbs lose texture and flavor.
  • Reheat gently with a splash of water or oil to maintain texture.
