  • 2 tablespoons olive oil

Instructions

  1. Prepare Your Ingredients: Finely chop the onion and garlic. Slice the chorizo into bite-sized pieces. Drain and rinse the canned chickpeas thoroughly to remove excess salt and liquid.
  2. Sauté Chorizo and Aromatics: Heat olive oil in a large pot over medium heat. Add the chorizo and cook for about 5 minutes until it releases its oil and edges become slightly crispy. Add the chopped onion and garlic, stirring until soft and fragrant.
  3. Build the Stew Base: Pour in the crushed tomatoes and sprinkle smoked paprika over the mixture. Stir well and cook for 2–3 minutes to blend the smoky and acidic flavors.
  4. Add Chickpeas and Broth: Stir in the chickpeas, then add vegetable or chicken broth to cover the ingredients. Bring the stew to a simmer and let it cook for 20 minutes, allowing it to thicken slightly and the flavors to deepen.
