Ingredients

Scale

Wet Ingredients

  • 1 cup (227g) unsalted butter, softened
  • 1 cup (200g) brown sugar, packed
  • 1 large egg
  • 1 teaspoon vanilla extract

Dry Ingredients

  • 2 cups (250g) all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt

Add-Ins

  • 1 cup caramel bits or soft caramel squares
  • 1 cup chocolate chips or chunks
  • 1 cup chopped pecans or walnuts

Instructions

  1. Prepare the dough: Cream the softened butter with brown sugar until light and fluffy. Beat in the egg and vanilla extract until fully combined. In a separate bowl, whisk together the all-purpose flour, baking soda, and salt. Gradually mix the dry ingredients into the wet ingredients until a smooth cookie dough forms, ready for the add-ins.
  2. Fold in the fillings: Gently fold in the chocolate chips and chopped nuts, making sure they are evenly distributed. Carefully fold in the caramel bits to prevent early melting, ensuring each cookie will have pockets of gooey caramel, rich chocolate, and crunchy nuts.
  3. Shape the cookies: Using a cookie scoop or tablespoon, drop portions of dough onto a parchment-lined baking sheet, spacing them adequately for spreading. Press a caramel bit or small caramel square gently on top of each dough mound, then sprinkle a few extra chopped nuts on top to create the classic turtle appearance.
  4. Bake and cool: Preheat the oven to 350°F (175°C). Bake cookies for 10-12 minutes or until the edges turn golden brown but the centers remain soft. Allow the cookies to cool on the baking sheet for a few minutes, then transfer to a wire rack to cool completely. This helps the caramel set slightly while maintaining its gooey texture.

Notes

  • Use room temperature butter for creamy dough and better texture.
  • Mix the dough just until combined to avoid tough cookies.
  • Chop nuts uniformly for consistent crunch and even baking.
  • Monitor baking time closely; remove as soon as edges brown to keep centers soft.
  • Chill dough for 30 minutes to an hour to enhance flavor and control spreading.
  • Press caramel gently on top before baking to keep it from sinking fully into the dough.
