Ingredients

Scale

Dry Ingredients

  • 1/2 cup unsweetened cocoa powder
  • 1 cup protein powder (whey or plant-based)
  • 3/4 cup almond flour
  • 1 tsp baking powder
  • Optional: 1/2 tsp cinnamon, espresso powder, or chili powder (for spiced variations)

Wet Ingredients

  • 1 large egg or 1 flax egg (1 tbsp flaxseed meal + 3 tbsp water)
  • 1/2 cup Greek yogurt or 1/3 cup nut butter (e.g., almond or peanut butter)
  • 1/3 cup maple syrup or honey

Mix-ins (Optional)

  • 1/4 cup dark chocolate chips
  • Optional superfood additions: 1 tbsp chia seeds, hemp seeds, or collagen peptides

Instructions

  1. Prepare Your Ingredients: Gather and measure all ingredients. Preheat your oven to 350°F (175°C). Line a mini muffin pan with liners or grease a baking dish to prevent sticking.
  2. Mix Dry Ingredients: In a medium bowl, whisk together cocoa powder, protein powder, almond flour, baking powder, and any optional spices to ensure even distribution and to avoid clumps.
  3. Combine Wet Ingredients: In a separate bowl, beat the egg or flax egg, Greek yogurt or nut butter, and maple syrup or honey until smooth and well combined.
  4. Blend Wet and Dry Mixtures: Gradually add the dry ingredients into the wet ingredients, stirring gently until just combined to maintain a tender texture. Fold in dark chocolate chips and any superfood additions if desired.
  5. Bake and Cool: Fill mini muffin liners about two-thirds full with batter. Bake for 12–15 minutes or until a toothpick inserted comes out mostly clean with a few moist crumbs. Allow the bites to cool completely before removing from the pan.

Notes

  • Use high-quality unsweetened cocoa powder for the richest flavor.
  • Do not overbake; remove from oven while slightly underdone to keep bites moist and chewy.
  • Adjust liquids slightly depending on your choice of protein powder, as absorption can vary.
  • Bring ingredients to room temperature before mixing for smoother batter and better texture.
  • For a smoother batter, consider blending wet and dry ingredients in a blender instead of stirring.
  • For vegan or egg-free versions, use flax eggs and plant-based protein and nut butter.
  • Store bites in an airtight container at room temperature up to 3 days or in the fridge up to 1 week.
  • Freeze leftovers up to 3 months in a sealed container and thaw before serving.
  • Reheat briefly in the microwave (10-15 seconds) or enjoy chilled to change texture.
