  • 12 small corn or flour tortillas

Instructions

  1. Prepare the Filling: In a bowl, mix shredded chicken with sautéed onions, garlic, chili powder, cumin, salt, and cheese. Add any optional ingredients like chopped green chilies or fresh herbs to enhance flavor.
  2. Warm the Tortillas: Heat tortillas briefly on a skillet or in the microwave until pliable to prevent cracking when rolling.
  3. Roll the Taquitos: Place about 2 tablespoons of the chicken filling near the edge of each tortilla. Roll tightly and tuck the edge underneath to seal and avoid unrolling during cooking.
  4. Cook Until Crispy: Fry the taquitos in hot oil until golden and crunchy, about 2-3 minutes per side, or bake them on a greased baking sheet at 425°F (220°C) for 15-20 minutes, turning halfway through, until crisp.
