Instructions

  1. Prepare the Chicken: Cook chicken breasts by baking, poaching, or pan-searing until fully cooked. Let cool slightly, then shred into bite-sized pieces. Season with cumin, chili powder, salt, and pepper to taste to infuse rich flavor.
  2. Heat the Pan: Warm a non-stick or cast-iron skillet over medium heat and add olive oil or butter. This fat helps create a golden, crispy tortilla while keeping it from drying out.
  3. Assemble the Quesadilla: Place one tortilla flat in the pan. Sprinkle a generous layer of shredded cheese over half of the tortilla, then add a layer of seasoned shredded chicken. Add any optional veggies you prefer, then sprinkle a little more cheese over the fillings. Fold the tortilla over to form a half-moon shape.
  4. Cook to Perfection: Let the quesadilla cook for about 2–3 minutes until the bottom is golden brown and the cheese starts to melt. Carefully flip it and cook the other side for another 2 minutes until golden and crispy with melted cheese inside.
