Herbs and Seasonings

  • 2 cloves garlic, minced
  • 1 tsp fresh thyme leaves (or 1/2 tsp dried thyme)
  • 2 tbsp fresh parsley, chopped
  • Salt, to taste
  • Freshly ground black pepper, to taste

  • 2 tbsp olive oil or butter for sautéing

Instructions

  1. Prepare the Ingredients: Chop the carrots, celery, and onions into bite-sized pieces. Cook and shred the chicken into strips or chunks for easy eating.
  2. Sauté the Vegetables: Heat olive oil or butter in a large pot over medium heat. Add onions, carrots, and celery, and sauté until softened and fragrant, about 5 to 7 minutes.
  3. Add Broth and Chicken: Pour in the chicken broth and add the shredded chicken. Bring the soup to a gentle boil, then reduce heat to a simmer to allow flavors to meld.
  4. Cook the Noodles: Add the egg noodles during the last 7 to 10 minutes of cooking. Cook until noodles are tender but still hold shape.
  5. Season and Garnish: Stir in minced garlic, fresh thyme, and parsley. Season with salt and pepper to taste, then give the soup a final stir before serving warm.
