Ingredients

Scale

Main Ingredients

  • 1 lb ground chicken (lean or slightly fatty)
  • 1 cup breadcrumbs (or almond flour/gluten-free crackers for gluten-free option)
  • 1/2 cup finely chopped onion
  • 2 cloves garlic, minced
  • 1 large egg
  • 1/4 cup milk
  • 1 tbsp Worcestershire sauce
  • 2 tbsp fresh parsley, finely chopped (or basil, thyme, rosemary as variation)
  • Salt, to taste
  • Black pepper, to taste
  • 1/4 cup ketchup (for topping)

Optional Variations

  • 1/2 cup finely grated carrots or zucchini (vegetable boost)
  • 1/2 cup shredded cheddar or mozzarella cheese (cheese lovers)
  • 12 chopped jalapeños or 1/4 tsp cayenne pepper (spicy kick)

Instructions

  1. Prepare Ingredients: Finely chop the onion, garlic, and parsley. Preheat your oven to 375°F (190°C) so it’s ready when the mixture is combined.
  2. Mix the Meatloaf Base: In a large bowl, combine the ground chicken, breadcrumbs, chopped onion, garlic, parsley, egg, milk, Worcestershire sauce, salt, and pepper. Mix gently using your hands or a spoon until just combined. Avoid overmixing to prevent dense meatloaf.
  3. Shape and Bake: Transfer the mixture into a loaf pan or shape it by hand on a parchment-lined baking sheet. Spread ketchup evenly over the top to create a tangy glaze. Bake at 375°F (190°C) for approximately 45 minutes, or until the internal temperature reaches 165°F (74°C).
  4. Let It Rest: Remove from the oven and let the meatloaf rest for at least 10 minutes before slicing. This helps retain juices and makes for easier, cleaner slices.

Notes

  • Don’t Skip the Rest: Resting keeps your meatloaf juicy and easier to cut clean slices.
  • Use Fresh Herbs: Fresh parsley or other herbs add vibrancy that dried versions can’t match.
  • Check Internal Temperature: Use a meat thermometer to avoid over or undercooking.
  • Add Moisture if Needed: If the mixture feels too dry, add a splash of extra milk or a spoonful of Greek yogurt.
  • Shape Options: Use a loaf pan for a neat shape or freeform on parchment paper for crisper edges.
