Chicken & Dressing Casserole

This Chicken & Dressing Casserole is a hearty, comforting bake perfect for family dinners or casual get-togethers. Combining tender chicken, savory herbs, fluffy stuffing, and aromatic veggies, it creates a warm, satisfying meal that’s easy to prepare and adaptable to your taste preferences.

Ingredients

Scale

Protein

  • 2 cups cooked chicken, shredded or cubed (breast or thighs)

Stuffing Base

  • 6 cups prepared stuffing mix (use gluten-free stuffing mix for GF option)

Liquids

  • 2 to 2.5 cups warm chicken broth (preferably homemade)

Vegetables

  • 1 cup chopped onion
  • 1 cup chopped celery

Dairy and Fats

  • 3 tablespoons butter (plus extra for dotting on top; substitute olive oil for dairy-free)

Seasonings

  • 1 teaspoon dried sage
  • 1 teaspoon dried thyme
  • Salt and black pepper, to taste

Optional

  • 1 cup shredded cheddar or mozzarella cheese, or cream cheese for a cheesy variation

Instructions

  1. Prepare Your Chicken: Cook chicken by poaching or baking if not already cooked. Shred or cube into bite-sized pieces and set aside.
  2. Sauté Aromatics: In a skillet, melt butter over medium heat. Add chopped onions and celery, sauté until soft and fragrant, about 5 minutes.
  3. Mix Dressing Base: In a large bowl, combine prepared stuffing mix with sautéed vegetables. Pour in warm chicken broth gradually and stir gently to moisten evenly without making soggy.
  4. Combine Chicken and Dressing: Fold shredded chicken into the stuffing mixture. Season with salt, pepper, sage, and thyme. Adjust seasonings to taste and mix well.
  5. Assemble and Bake: Transfer mixture to a greased baking dish, spreading evenly. Dot extra butter on top. Cover with foil and bake at 350°F (175°C) for 25 minutes. Remove foil and bake another 10 minutes until top is golden brown and crispy.

Notes

  • Use homemade chicken broth for richer flavor.
  • Add broth gradually to avoid sogginess.
  • Let casserole rest 5-10 minutes after baking to set and enhance flavors.
  • Prep the casserole the night before and refrigerate for improved taste.
  • Sprinkle crushed nuts or breadcrumbs on top before baking for added crunch.
