Ingredients

Scale

Pasta and Protein

  • 2 cups elbow macaroni
  • 2 cups cooked chicken breast or thighs, shredded or chopped
  • 3/4 cup barbecue sauce (sweet, spicy, or smoky)

Cheese Sauce

  • 2 tablespoons butter
  • 2 tablespoons all-purpose flour (or cornstarch for gluten-free)
  • 2 1/2 cups whole milk (or a mix of milk and cream)
  • 1 1/2 cups sharp cheddar cheese, freshly shredded
  • 1 cup Monterey Jack cheese, freshly shredded
  • 1 teaspoon garlic powder
  • 1 teaspoon smoked paprika
  • Salt and pepper, to taste

Instructions

  1. Cook the pasta: Boil the elbow macaroni in salted water according to package instructions until al dente. Drain and set aside.
  2. Prepare the BBQ chicken: In a skillet over medium heat, warm the cooked chicken pieces with the barbecue sauce until heated through and well coated, allowing smoky flavors to infuse.
  3. Make the cheese sauce: In a saucepan, melt butter over medium heat. Whisk in flour to create a roux and cook for about 1-2 minutes. Gradually add milk while whisking continuously until the sauce thickens. Stir in cheddar and Monterey Jack cheeses, garlic powder, smoked paprika, salt, and pepper until smooth and melted.
  4. Combine mac, chicken, and sauce: Add the cooked pasta and BBQ chicken to the cheese sauce, stirring well to evenly coat every piece with creamy, smoky goodness.
  5. Bake (optional): For a golden crust, transfer the mixture to a baking dish. Sprinkle additional cheese or breadcrumbs on top and bake at 375°F (190°C) for about 15 minutes until bubbly and lightly browned.

Notes

  • Use freshly shredded cheese for smoother melting and better texture.
  • Undercook pasta slightly to avoid mushiness after baking or mixing with sauce.
  • Adjust barbecue sauce amount to maintain a balanced flavor without overpowering the cheese.
  • Enhance smoky depth using smoked paprika and optional chipotle powder.
  • Let the dish rest a few minutes after baking to set and improve serving consistency.
