Ingredients

Scale

Vegetables

  • 4 cups cauliflower florets, chopped
  • 1 large onion, chopped
  • 2 celery stalks, chopped
  • 810 roasted garlic cloves

Dairy

  • 1 ½ cups sharp cheddar cheese, shredded
  • ½ cup heavy cream or milk
  • 2 tablespoons butter

Liquids and Oils

  • 4 cups vegetable or chicken broth
  • 1 tablespoon olive oil (plus extra for roasting garlic)

Seasonings and Herbs

  • Salt, to taste
  • Black pepper, to taste
  • Optional: fresh thyme or parsley for garnish

Instructions

  1. Roast the Garlic and Prepare Vegetables: Roast whole garlic cloves in olive oil at 375°F (190°C) for 25-30 minutes until golden and soft. Meanwhile, chop cauliflower florets, onion, and celery to prepare for cooking.
  2. Sauté the Aromatics: In a large pot, melt butter with a little olive oil. Sauté chopped onion and celery over medium heat until translucent and fragrant, building a flavorful base.
  3. Cook the Cauliflower and Broth: Add the cauliflower florets and roasted garlic cloves to the pot. Pour in the vegetable or chicken broth and bring to a simmer. Cook until the cauliflower is tender, about 15-20 minutes.
  4. Blend Until Smooth: Use an immersion blender directly in the pot or transfer the mixture in batches to a blender. Blend until perfectly smooth and velvety, ensuring no lumps remain.
  5. Add Cheese and Cream: Return the blended soup to the pot if needed. Stir in shredded sharp cheddar cheese and cream or milk. Heat gently over low heat, stirring frequently, until the cheese fully melts into the soup.
  6. Season and Serve: Taste and adjust seasoning with salt, pepper, and optional fresh herbs like thyme or parsley. Serve hot, garnished with extra cheddar or chopped parsley for added texture and color.

Notes

  • Roast garlic slowly at 375°F for 25-30 minutes to develop sweetness without burning.
  • Blend soup in small batches to ensure uniform texture and avoid spills.
  • Use sharp or extra sharp cheddar cheese for a bolder flavor that complements the mild cauliflower.
  • Balance creaminess by mixing cream and milk to keep soup rich but light.
  • Adjust soup thickness by adding broth to thin or simmering longer uncovered to thicken.
