Ingredients

Scale

Main Ingredients

  • 2 cups shredded cabbage (about half a medium cabbage)
  • 1/2 cup all-purpose flour (or chickpea/rice flour for gluten-free)
  • 2 large eggs (or flaxseed egg substitute for vegan)
  • 3 green onions, chopped
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons vegetable oil (for frying)

Optional Add-ins & Spices

  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon smoked paprika
  • 1/4 cup shredded cheddar or mozzarella cheese (for cheesy upgrade)
  • 1 diced jalapeño or 1/4 teaspoon cayenne pepper (for spicy kick)
  • 2 tablespoons fresh herbs (cilantro, parsley, or dill)

Instructions

  1. Prepare the Cabbage: Finely shred fresh cabbage using a sharp knife or grater to ensure thin, even pieces. This helps the fritters cook evenly and maintain a pleasant crunch.
  2. Mix the Batter: In a large bowl, combine the shredded cabbage, flour, and beaten eggs. Add chopped green onions, salt, pepper, and any optional spices or add-ins you prefer. Stir until the mixture holds together but is not too thick; adjust flour quantity if necessary.
  3. Heat the Pan: Preheat a non-stick skillet over medium heat and add a generous amount of vegetable oil. Test the temperature by dropping a small amount of batter into the pan; it should sizzle immediately.
  4. Fry the Fritters: Using a spoon or your hands, scoop portions of the batter and gently flatten them in the skillet. Fry each fritter for about 3-4 minutes per side, or until golden brown and crispy.
  5. Drain and Serve: Transfer cooked fritters to a paper towel-lined plate to remove excess oil. Serve warm, optionally garnished with sour cream, fresh herbs, or spicy mayo.

Notes

  • Drain Excess Water: Squeeze shredded cabbage in a clean kitchen towel to remove moisture and avoid soggy fritters.
  • Consistent Size: Make fritters uniform in size to ensure even cooking.
  • Hot Oil: Ensure oil is sufficiently hot before frying to achieve a crispy exterior.
  • Don’t Overcrowd: Fry in batches to maintain oil temperature and prevent steaming.
  • Keep Warm: Place finished fritters on a wire rack in a warm oven to keep them crispy while cooking the remainder.
