Ingredients

Scale

Main Ingredients

  • 2 boneless, skinless chicken breasts
  • 1 cup fresh tomatoes (Roma or cherry), diced
  • 2 garlic cloves, finely chopped
  • 1/4 cup fresh basil leaves, finely chopped
  • 2 tablespoons olive oil (plus extra for drizzling)
  • 1 tablespoon balsamic vinegar
  • Salt and pepper, to taste

Optional Ingredients

  • 1/4 cup shredded mozzarella or grated Parmesan cheese

Instructions

  1. Prepare the bruschetta topping: Dice the fresh tomatoes and finely chop the garlic cloves and basil leaves. In a bowl, combine tomatoes, garlic, basil, olive oil, balsamic vinegar, salt, and pepper. Mix well and let sit for about 10 minutes to allow the flavors to meld while cooking the chicken.
  2. Cook the chicken breasts: Heat olive oil in a large skillet over medium heat. Season the chicken breasts with salt and pepper. Cook the chicken for 5-7 minutes on each side until golden brown and cooked through (internal temperature should reach 165°F/74°C). Remove from skillet and keep warm.
  3. Top the chicken with bruschetta: Spoon the prepared bruschetta mixture generously over each cooked chicken breast. If using cheese, sprinkle shredded mozzarella or Parmesan on top and cover the skillet for a few minutes to let the cheese melt slightly.
  4. Serve and enjoy: Plate the bruschetta chicken and optionally drizzle with extra olive oil or balsamic glaze. Garnish with additional fresh basil leaves and serve immediately.

Notes

  • Use ripe tomatoes for the freshest and most vibrant bruschetta topping.
  • Cook chicken in batches if needed to avoid overcrowding the skillet for even cooking.
  • Let the bruschetta topping sit for a few minutes before serving to develop deeper flavors.
  • Do not overcook the chicken to keep it moist; use a meat thermometer or cut to check doneness.
  • Add fresh basil last minute to preserve its bright flavor and color.
  • Leftover chicken can be stored refrigerated for up to 3 days; keep tomato topping separate to avoid sogginess.
  • Freeze cooked chicken breasts without topping for up to 2 months; thaw overnight before reheating and adding fresh topping.
  • Reheat gently in a low oven or microwave to prevent drying out and add fresh bruschetta topping after warming.
