  • 3 1/2 cups (440g) all-purpose flour
  • 1/2 cup (115g) unsalted butter, softened
  • 4 large eggs, at room temperature
  • 1/2 cup (120ml) whole milk, warmed
  • 2 1/4 tsp (one packet) active dry yeast
  • 1/4 cup (50g) granulated sugar
  • 1 tsp salt

Instructions

  1. Activate Your Yeast: Warm the milk slightly (about 100-110°F / 38-43°C) and stir in the sugar and active dry yeast. Let it rest for 5 to 10 minutes until the mixture becomes frothy, ensuring the yeast is active and ready.
  2. Mix the Dough: In a large mixing bowl, combine the all-purpose flour and salt. Add in the eggs, softened unsalted butter, and the activated yeast mixture. Mix until a sticky dough forms. Then knead for about 10 minutes by hand or using a stand mixer with a dough hook until the dough is smooth and elastic.
  3. First Rise: Place the dough in a lightly greased bowl. Cover it with a clean towel or plastic wrap, and leave it in a warm spot to rise until doubled in size, typically 1 to 2 hours.
  4. Shape the Rolls: Gently punch down the dough to release trapped air bubbles. Divide the dough into equal portions (around 12 pieces), then shape each portion into a smooth ball. Arrange the formed rolls on a baking tray lined with parchment paper, spacing them to allow room for rising.
  5. Second Rise: Cover the shaped rolls and let them rise again in a warm spot until puffy and nearly doubled in size, about 45 minutes to 1 hour.
  6. Bake to Golden Perfection: Preheat your oven to 375°F (190°C). Brush the tops of the rolls with an egg wash (a beaten egg) for a shiny golden crust. Bake for 15 to 20 minutes or until the rolls are deeply golden and fragrant. Remove from the oven and let cool slightly before serving.
