Birthday Cake Pops

Birthday Cake Pops

Birthday Cake Pops are delightful bite-sized desserts combining moist, flavorful cake with a smooth, colorful candy coating. Perfect for celebrations, parties, or gifting, these festive treats are easy to make, customizable, and loved by all ages.

Ingredients

Cake Base

  • Your favorite boxed or homemade cake mix (enough for one 9×13 inch cake)

Binding and Sweetness

  • Buttercream or frosting, a few spoonfuls (approximately 1 cup)

Coating and Decoration

  • Candy melts or chocolate (8 to 12 oz, depending on quantity)
  • Food coloring (optional, to tint candy melts or frosting)
  • Sprinkles and decorations (as desired for festive look)
  • Lollipop sticks (one per cake pop, 20-30 sticks for standard batch)

Instructions

  1. Step 1: Bake and Crumble Your Cake

Bake your chosen cake mix according to the package or recipe instructions, then let it cool completely. Break the cake into crumbs using your hands or a food processor — the finer the crumbs, the smoother your cake pops will be.

  2. Step 2: Mix in the Frosting

Add a few spoonfuls of frosting to the cake crumbs and mix gently until the texture feels like dough and holds together when pressed. Add frosting gradually to avoid overly soft mixtures.

  3. Step 3: Shape the Cake Balls

Use a small cookie scoop or your hands to form uniform-sized balls. Place them on a parchment-lined tray and chill in the refrigerator for at least 1 hour to firm up. This step is crucial for easy dipping.

  4. Step 4: Prepare the Candy Coating

Melt your candy melts or chocolate using a double boiler or microwave in short bursts, stirring frequently. If desired, mix in food coloring to achieve your perfect birthday palette.

  5. Step 5: Insert Sticks and Dip

Dip the tip of each lollipop stick in melted candy, then insert halfway into each chilled cake ball to anchor. Once all sticks are inserted, dip each pop into the melted candy coating, tapping off excess gently.

  6. Step 6: Add Sprinkles and Let Set

Before the coating hardens, decorate immediately with sprinkles or edible glitter for a festive look. Stand the pops upright in a styrofoam block or cake pop stand until completely set.

Notes

  • Chill Thoroughly: Refrigerate cake balls before dipping to ensure the coating sticks and the pops hold their shape.
  • Use Candy Melts: These are easier to work with and set quickly compared to regular chocolate.
  • Thin the Coating: Add a bit of vegetable oil or shortening to melted candy to create a smoother dip.
  • Avoid Over-Mixing: Mixing cake and frosting just enough keeps your pops moist without becoming gummy.
  • Work Quickly: Candy melts harden fast, so have decorations ready to apply immediately after dipping.
