Instructions

  1. Prepare the Penne Pasta: Bring a large pot of salted water to a boil and cook the penne pasta until al dente, about 10 to 12 minutes. Drain and set aside, reserving a little pasta water to help adjust the sauce if needed.
  2. Sauté the Beef: Heat olive oil in a large skillet over medium-high heat. Add the thinly sliced beef strips and season with salt, pepper, and paprika. Cook quickly until browned but still tender, about 3 to 4 minutes. Remove the beef from the skillet and set aside to avoid overcooking.
  3. Cook Mushrooms, Onion, and Garlic: In the same skillet, add butter and sauté the diced onion until translucent. Add sliced mushrooms and minced garlic, cooking until mushrooms release their juices and soften, about 5 minutes. This creates a rich base for the sauce.
  4. Make the Sauce: Sprinkle flour over the cooked mushrooms and onions, stirring constantly for about a minute to remove the raw flour taste. Gradually pour in the beef broth while stirring to prevent lumps. Bring the mixture to a gentle simmer and cook until it thickens to a creamy consistency.
  5. Combine and Finish: Reduce heat to low, stir in the sour cream until smooth, then return the cooked beef strips to the skillet. Mix well to coat evenly. Add the cooked penne pasta to the sauce and toss to combine. Adjust seasoning with salt and pepper as needed. If the sauce is too thick, add a splash of the reserved pasta water to loosen it.

  • Slice beef thinly; freezing beef for 20 minutes beforehand makes slicing easier and ensures tenderness.
  • Do not overcook the beef; remove it as soon as it is browned to keep it juicy and tender.
  • Reserve some pasta water to adjust the sauce consistency if needed.
  • Use full-fat sour cream for the creamiest and richest sauce.
