Ingredients

Scale

Filling Ingredients

  • 500g lean ground beef
  • 1 small onion, finely diced
  • 2 cloves garlic, minced
  • 2 tablespoons Worcestershire sauce
  • 2 tablespoons fresh parsley, chopped
  • 1 tablespoon fresh thyme leaves
  • Salt, to taste
  • Black pepper, to taste

Pastry and Finishing

  • 2 sheets puff pastry, thawed if frozen
  • 1 egg, beaten (for egg wash)

Instructions

  1. Prepare the Filling: In a skillet over medium heat, sauté finely chopped onions and garlic until translucent and fragrant. Add the ground beef, breaking it apart with a spatula, and cook until browned and fully cooked through. Stir in Worcestershire sauce, fresh herbs, salt, and pepper. Remove from heat and let the filling cool while you prepare the pastry.
  2. Roll Out and Cut Puff Pastry: Lightly dust your work surface with flour, then roll out the puff pastry sheets to about 1/8-inch thickness. Cut each sheet into even rectangles approximately 4 by 6 inches to size the rolls perfectly.
  3. Fill and Roll: Spoon a generous line of the beef filling along one edge of each pastry rectangle. Carefully roll the pastry over the filling, sealing the edge with a bit of water. Pinch the seams tight to ensure the filling stays inside when baked.
  4. Apply Egg Wash and Score: Transfer the rolls to a baking sheet lined with parchment paper. Brush each roll generously with beaten egg to create a glossy crust. Lightly score the tops with a knife to allow steam to escape and for a decorative touch.
  5. Bake Until Golden: Bake in a preheated oven at 200°C (400°F) for 20-25 minutes or until puff pastry is golden brown and crisp. Allow to cool slightly before serving to let the flavors settle.

Notes

  • Drain excess fat after cooking the beef to prevent soggy pastry.
  • Let the filling cool slightly before assembling to keep the pastry crisp.
  • Seal edges tightly with water or egg wash to prevent filling leaks during baking.
  • Roll pastry evenly to ensure consistent baking and perfect flakiness.
  • Allow sausage rolls to rest a few minutes after baking for easier handling and improved flavor melding.
