  • 2 eggs, beaten
  • 12 tbsp cooking oil (vegetable or other neutral oil)

Instructions

  1. Prepare Your Ingredients: Cut the beef into thin strips or bite-sized pieces for faster cooking. Dice the vegetables, mince garlic and ginger, beat the eggs, and have the cooked rice ready. Organizing all components before cooking ensures a smooth process.
  2. Cook the Beef: Heat a large pan or wok over medium-high heat and add a little oil. Sear the beef strips until browned but still tender. Remove from the pan and set aside to retain juiciness.
  3. Scramble the Eggs: In the same pan, add more oil if needed, pour in the beaten eggs, and scramble quickly until just cooked. Transfer the eggs to a plate for later use.
  4. Stir-Fry the Aromatics and Vegetables: Add garlic and ginger to the pan and sauté briefly until fragrant. Add the peas, carrots, and green onions, cooking until they are tender-crisp and vibrant.
  5. Combine Rice and Flavors: Add the cooked rice to the pan, breaking up any clumps. Return the beef and scrambled eggs back into the pan. Pour soy sauce and drizzle sesame oil over everything while stirring continuously for even flavor distribution.
  6. Final Seasoning and Serve: Season the dish with salt and pepper to taste. Toss the mixture well, then serve hot with optional garnishes such as chopped green onions, toasted sesame seeds, or fresh cilantro.
