Ingredients

Scale

Main Ingredients

  • 3 ripe bananas, mashed
  • 1 ¾ cups all-purpose flour (or gluten-free flour blend)
  • 1 cup brown sugar
  • 1 teaspoon ground cinnamon
  • ½ teaspoon ground nutmeg
  • ¼ teaspoon ground cloves
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • 1 large egg, beaten (or flaxseed egg for vegan)
  • ½ cup melted butter or oil (such as vegetable or coconut oil)
  • 1 teaspoon vanilla extract

Optional Variations

  • ½ cup chopped walnuts or pecans
  • ½ cup chocolate chips
  • Maple syrup or honey (to replace brown sugar)
  • Pinch of sea salt for sprinkling on top

Instructions

  1. Prepare Your Ingredients: Preheat your oven to 350°F (175°C) and grease your loaf pan. In a mixing bowl, mash the ripe bananas until smooth, then set aside.
  2. Mix Dry Ingredients: In a separate bowl, whisk together the flour (or gluten-free blend), brown sugar, cinnamon, nutmeg, cloves, baking soda, and salt to distribute the spices evenly.
  3. Combine Wet Ingredients: Add the beaten egg, melted butter or oil, and vanilla extract to the mashed bananas. Stir until well blended.
  4. Combine Wet and Dry Mixtures: Pour the dry ingredients into the wet banana mixture and gently stir until just combined. Be careful not to overmix to keep the bread tender.
  5. Bake: Pour the batter into the prepared loaf pan and bake for about 60 minutes, or until a toothpick inserted in the center comes out clean. Start checking around 55 minutes to avoid overbaking.

Notes

  • Use overripe bananas with blackened peels for maximum sweetness and flavor.
  • Do not overmix the batter to prevent a tough bread texture.
  • Test doneness with a toothpick inserted at 55 minutes.
  • Let the bread cool completely before slicing to maintain its shape.
  • Adjust the amount of cinnamon and nutmeg to personalize the spice level.
  • Store leftover bread wrapped tightly at room temperature for 2 to 3 days.
  • Freeze slices wrapped in foil or plastic wrap for up to 3 months.
  • Reheat gently in a toaster oven or microwave to restore freshness.
