Bacon Cheeseburger Bombs

Bacon Cheeseburger Bombs are savory, bite-sized pockets filled with juicy ground beef, crispy bacon, melted cheddar cheese, and classic cheeseburger flavors wrapped in soft, golden dough. Perfect for game day, parties, or an easy snack, these delicious bombs combine smoky, cheesy, and tangy elements in every bite for an irresistible treat.

Ingredients

Scale

Meat & Cheese

  • 1 lb (450g) ground beef (80/20 for best flavor and juiciness)
  • 6 slices bacon
  • 1 cup shredded sharp cheddar cheese

Dough

  • 1 can refrigerated biscuit dough or 1 lb pizza dough

Vegetables & Aromatics

  • 1/4 cup finely chopped onion
  • 2 cloves garlic, finely chopped

Seasonings & Sauces

  • 1 tbsp ketchup
  • 1 tbsp mustard
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/4 tsp smoked paprika
  • 1 egg (for egg wash)

Instructions

  1. Prepare the Filling: Cook the ground beef in a skillet over medium heat until browned and crumbly. Drain excess fat, then stir in finely chopped onion, garlic, ketchup, mustard, salt, pepper, and smoked paprika. Cook together for 3-4 minutes to blend the flavors. Remove from heat and let cool slightly.
  2. Cook Bacon: Fry bacon slices in a pan until crispy. Drain on paper towels and cool. Chop into small pieces for easier mixing and stuffing.
  3. Combine Ingredients: In a mixing bowl, gently combine the cooked beef mixture, chopped bacon, and shredded cheddar cheese, distributing evenly without compressing the cheese.
  4. Shape the Bombs: Roll out your dough on a floured surface and cut into approximately 3×3 inch squares. Spoon a generous amount of filling onto each square, then fold and seal the edges tightly to form little pockets, using water or egg wash to help seal.
  5. Bake Until Golden: Place the filled dough bombs on a parchment-lined baking sheet. Brush the tops with beaten egg for a shiny crust. Bake in a preheated oven at 375°F (190°C) for 18-20 minutes, or until golden brown and puffed.

Notes

  • Don’t overfill the dough pockets to avoid leaks during baking.
  • Seal edges well with water or egg wash to keep filling secure.
  • Allow the filling to cool slightly before stuffing to prevent soggy dough.
  • Use freshly shredded sharp cheddar cheese for better melting and flavor.
  • Try biscuit dough for a fluffy crust or pizza dough for a chewier texture.
