Instructions

  1. Prepare the Filling: Mash the ripe avocados in a bowl, then mix in the rinsed black beans, finely chopped onion, minced garlic, cumin, chili powder, salt, and chopped cilantro until combined evenly to create a savory, creamy filling.
  2. Assemble the Quesadillas: Lay a tortilla flat and spread a generous layer of the avocado and black bean mixture on half of the tortilla. Sprinkle shredded cheese on top, then fold the tortilla over to close.
